Summer Grilled Fish Steaks

Premium-cut tuna, wahoo, and swordfish—ideal for the grill and summer gatherings.

Ingredients
- (1/2lb per person) YELLOWFIN TUNA STEAK
- (enough to lightly coat) Italian Vinaigrette Dressing
- (to taste) Montreal Steak Seasoning
- Cucumber Avocado Salsa
- Pinapple Salsa
Directions
- Portion fish into serving sizes. Remove skin and bloodline if desired.
- Marinate fish in Italian vinaigrette, coating both sides, for 20 minutes only.
(Do not marinate longer—acid can begin to “cook” the fish.) - Season lightly with Montreal Steak Seasoning just before grilling.
- Preheat grill to medium-high heat.
- Grill fish:
- Tuna: 2–3 minutes per side for medium-rare, depending on thickness
- Wahoo or Swordfish: 3–4 minutes per side, until cooked through
- Serve immediately over rice and top with fresh seasonal salsa.
Fresh Salsa Options
- Cucumber Avocado: Cucumber, cherry tomatoes, red onion, avocado, lime, cilantro
- Pineapple: Pineapple, green pepper, red onion, lime, cilantro
