Crispy Parmesan-Encrusted White Fish
Make crispy, oven-baked Parmesan-encrusted white fish in under 30 minutes. Perfect for grouper, snapper, sea bass, or salmon—fresh from Hatteras Seafoods.

Ingredients

  • (1½ pounds) White fish fillets, bones removed
  • (1 cup) Finely grated Parmesan & Asiago cheese blend
  • (½ cup) Italian-style panko breadcrumbs
  • (2 Tbsp) Freshly squeezed lemon juice
  • (1 tsp) Garlic powder
  • (1 tsp) Dried Oregano
  • (½ tsp) Salt
  • (¼ tsp) Black Pepper
  • (2 Tbsp) Fresh parsley, finely chopped (for garnish)

Directions

  1. Preheat the oven to 400°F (205°C).

  2. Line a baking sheet with parchment paper and lightly brush with olive oil or spray with nonstick cooking spray.

  3. Pat the fish fillets dry with paper towels and set aside.

  4. In a shallow bowl, combine the grated cheeses, breadcrumbs, garlic powder, oregano, salt, and black pepper.

  5. Drizzle in the olive oil and lemon juice, mixing until the topping becomes moist and clumpy (similar to damp sand).

  6. Press each fillet into the Parmesan mixture, coating both sides well. Gently but firmly press so the crust adheres.

  7. Place the coated fillets on the prepared baking sheet.

  8. Bake for 12–15 minutes, or until the topping is golden and crispy and the fish flakes easily with a fork.

  9. Garnish with freshly chopped parsley and serve immediately.
