Ingredients
- (1½ pounds) White fish fillets, bones removed
- (1 cup) Finely grated Parmesan & Asiago cheese blend
- (½ cup) Italian-style panko breadcrumbs
- (2 Tbsp) Freshly squeezed lemon juice
- (1 tsp) Garlic powder
- (1 tsp) Dried Oregano
- (½ tsp) Salt
- (¼ tsp) Black Pepper
- (2 Tbsp) Fresh parsley, finely chopped (for garnish)
Directions
- Preheat the oven to 400°F (205°C).
- Line a baking sheet with parchment paper and lightly brush with olive oil or spray with nonstick cooking spray.
- Pat the fish fillets dry with paper towels and set aside.
- In a shallow bowl, combine the grated cheeses, breadcrumbs, garlic powder, oregano, salt, and black pepper.
- Drizzle in the olive oil and lemon juice, mixing until the topping becomes moist and clumpy (similar to damp sand).
- Press each fillet into the Parmesan mixture, coating both sides well. Gently but firmly press so the crust adheres.
- Place the coated fillets on the prepared baking sheet.
- Bake for 12–15 minutes, or until the topping is golden and crispy and the fish flakes easily with a fork.
- Garnish with freshly chopped parsley and serve immediately.
