Ingredients
- (1 lb) NC GREENTAIL SHRIMP 21/25
- (1 link) Turkey Kielbasa (sliced into bite-size rounds)
- (2) Bell peppers (thinly sliced)
- (1) Yellow onion (thinly sliced)
- (2) Garlic cloves, minced
- (2 Tbsp) Olive Oil (divided)
- (3 Tbsp) Sweet Thai Chili Sauce
Directions
- Slice the onion and bell peppers into thin strips.
- Mince the garlic and slice the kielbasa into bite-size rounds.
- Peel, rinse, and butterfly the shrimp for even cooking.
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the kielbasa and sauté until lightly browned. Remove and set aside if pan is crowded.
- In the same pan, add remaining olive oil if needed. Sauté onions and bell peppers until softened, about 2–4 minutes.
- Add garlic and cook for 30 seconds, until fragrant.
- Add shrimp and cook 2–3 minutes, turning once, until pink and cooked through.
- Return kielbasa to the pan and drizzle with sweet Thai chili sauce. Toss to coat evenly.
- Serve immediately, spooned over rice.
Market Tip: For extra heat, add a pinch of crushed red pepper or a splash of sriracha. Great with jasmine rice or cauliflower rice.
